Spanish Rice

No longer rely on boxed versions of this flavorful classic. Made with brown rice and fresh veggies, it's the perfect side dish to any meal that needs a spicy side dish.
Don't be afraid of the brown rice in this dish... it just adds a more rich flavor (and is MUCH healthier than white rice).
Ingredients
- 2 tablespoons vegetable oil
- 1 cups brown rice, uncooked
- 1 onion, chopped
- 1/2 green bell pepper, chopped
- 2 cups chicken broth
- 1 10-ounce can of diced tomatoes and chilis, Look for
- 2 teaspoons chili powder
- 1 teaspoons ground cumin
- 1/2 teaspoons salt

Instructions:
Heat oil in skillet over medium heat. Saute the peppers, rice and onion until the veggies are clear and rice has begun to brown. Add water, tomatoes and seasonings. Cover and simmer for around 30 minutes. Watch for the broth to be completely absorbed and stir frequently. |
