Oven roasted veggies

A "kicked-up" version of your typical veggie side dish, these veggies hold their own even if served along side a classy pasta dish or a down-home chicken dinner. Also does a nice job of making your kitchen smell fantastic while roasting.
Ingredients
- 1 purple onion
- 1 sweet potato
- 1 zucchini or squash
- 1 red bell pepper
- 1 sprig fresh rosemary
- 1 bunch of fresh thyme
- 1 tablespoons balsamic vinegar
- 1 teaspoons salt
- 2 tablespoons grated parmesan

Instructions:
Chop and/or peel all veggies as appropriate and toss with remaining ingredients in a large mixing bowl until well coated.
Spread on baking sheet in a single layer and bake until tender and slightly browned (about 40 minutes), stirring every 10 minutes.
Tip: You can always used dried herbs to save time and money, but the flavor of fresh ones can't be beat for special occasions. |
