Tomato Basil Shrimp with Pasta

Fresh sweet basil adds wonderful flavor to this simple tomato sauce. Serve with a bottle of white wine to make your meal extra special.
Ingredients
- 8 ounces Angel hair pasta
- 2 tablespoons Olive oil
- 1 teaspoons Garlic, chopped, use fresh cloves
- 1 pounds Shrimp, fresh, peeled & deveined
- 56 ounces Italian-style diced tomatoes, drained, Red Gold brand is best
- 1/2 cups Dry white wine
- 1/4 cups Parsley, fresh
- 3 tablespoons Basil, fresh
- 1/4 cups Parmesan cheese, grated

Instructions:
In a large pot, bring water to a boil. Add pasta to boiling water and cook until done and drain.
Meanwhile heat 10 inch skillet on medium heat. Cook garlic until tender, stirring constantly so garlic does not burn. Add shrimp and cook until pink. Remove shrimp from skillet and set aside.
In same skillet, stir tomatoes, wine, parsley and basil. Continue cooking, stirring occasionally until liquid is reduced by half, approx. 10-15 minutes. Add shrimp and continue cooking until shrimp is warmed through (2-3 minutes).
Serve mixture over pasta. Sprinkle with Parmesan cheese. |
