Authentic Mexican style fajitas. Add any of your favorite fajita toppings to customize this recipe to your taste.
Steak needs to marinate 1 to 8 hours - plan ahead!
This recipe is great served with a side of Spanish rice.
Ingredients
2 pounds Steak, fresh
2 Onions, fresh, sliced
1 Red bell pepper, fresh, sliced
1 Green bell pepper, fresh, sliced
2 Tomatoes, chopped
1/2 pounds Cheddar jack cheese, grated
1 Package tortillas
2 tablespoons Butter
Marinade:
1/3 cups White vinegar.
1/2 cups Soy sauce.
2 teaspoons Garlic, diced.
4 tablespoons Lime juice.
1/2 cups Olive oil.
1 teaspoons Salt.
1 teaspoons Ground white pepper.
1 teaspoons Garlic powder.
1 teaspoons Chili powder.
1 teaspoons Dried oregano.
1 teaspoons Ground cumin.
1 teaspoons Paprika.
Instructions:
In a large glass bowl or Ziplock bag, whisk together all marinade ingredients. Cut steak into fillets, 4-6 oz. each. Place steak into marinade and let sit in refrigerator for 4 to 8 hours.
Heat grill to medium-high heat. Meanwhile, slice onions and bell peppers. Saute veggies in olive oil or butter until al dente. Grill steak until done. Slice steak into bite-size pieces.
Fill fajita shells with steak, veggies and cheese. Wrap the shells and serve.
