Parmesan Tilapia

  This recipe is a great change of pace for those of us who eat chicken and beef for supper most nights. The Tilapia I buy comes frozen and individually packaged from Sam's Club. Keep a bag on hand and you'll always have a delicious supper ready to go!

Ingredients

  • 2 pounds Tilapia fillets, (8 individually wrapped frozen fillets)
Topping:
  •  1/2 cups Parmesan cheese, grated.
  •  1/4 cups Butter, softened.
  • 3 tablespoons Mayonnaise.
  • 2 tablespoons Lemon juice.
  •  1/4 teaspoons Dried basil.
  •  1/4 teaspoons Ground black pepper.
  •  1/8 teaspoons Onion powder.
  •  1/8 teaspoons Celery salt.
Instructions:
Preheat oven to broiler setting.

In a small bowl, mix together Parmesan cheese, butter, mayo, lemon juice, basil, pepper, onion powder and celery salt. Set aside.

Arrange fish fillets in a single layer on broiling pan. Splash a little lemon juice onto fillets and season with salt and pepper. Broil a few inches from the heat for 3 minutes. Fish will start to turn white, but is not done. Flip the fillets over and broil for another 2-3 minutes. Watch the fish closely - do not over cook! Remove fish from oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork.
