Green Apple Spinach Salad with Chicken

This salad is a nice change of pace. The tangy dressing compliments the sweet raisins and salty cashews.
Ingredients
- 4 Boneless chicken breasts
- 9 ounces Baby spinach, fresh
- 2 Green apples, chopped
- 1/4 cups Golden raisins
- 1/4 cups Cider vinegar, Dressing
- 1/4 cups Olive oil, Dressing
- 1/4 teaspoons Garlic salt, Dressing
- 1/4 teaspoons Celery salt, Dressing
Topping:
- 1/2 cups Cashews, select.
Marinade:
- 1/4 cups Balsamic vinegar.

Instructions:
Marinate chicken in balsamic vinegar for 10 minutes. Grill or pan fry on high heat for 1-2 minutes on each side to seal in juices. Turn down heat and cook until no longer pink, approximately 10 minutes. Cut into 1/4 inch strips.
Chop apples into bite size pieces. In a small jar, combine the sugar, cider vinegar, oil,, garlic salt and celery salt; shake well.
Evenly divide spinach onto 6 salad plates. Top with raisins, cashews and chicken. Season with dressing as desired. Serve immediately. |
