Chicken salad with Strawberries

  Fresh sliced strawberries, homemade creamy dressing and candied cashews - yum! Make the dressing with low-fat sour cream and cut the fat.

Ingredients

  • 4 Chicken breasts
  • 2 Romaine lettuce heads, chopped
  • 1 cups Sour cream, Dressing
  • 1/4 cups Honey, Dressing
  • 2 tablespoons Parsley, fresh, Dressing
  • 1 1/2 teaspoons Ground mustard, Dressing
  • 3 teaspoons Lemon juice, Dressing
Topping:
  • 8 ounces Parmesan cheese, grated.
  •  1/2 cups Celery, chopped.
  • 8 ounces Honey-roasted cashews.
  • 1 cups Strawberries, fresh.
Marinade:
  • 1/2 cups Balsamic vinegar.
  • 1 teaspoons Garlic powder.
  • 1/4 teaspoons Ground black pepper.
Instructions:
In a medium bowl, marinate chicken breasts in balsamic vinegar, garlic powder and pepper. Marinate for 10 minutes. Grill or pan fry chicken on high heat for 1-2 minutes on each side to seal in juices. Turn down heat to medium and cook until chicken is no longer pink, approx 10 minutes. Slice into 1/4 inch thick pieces.

Meanwhile, rinse romaine lettuce and chop into bite-size pieces. Chop celery and slice strawberries.

In a small bowl combine sour cream, honey, parsley, ground mustard and lemon juice. Mix well.

Divide romaine onto 4 plates. Top with chicken, celery, strawberries, cashews and Parmesan cheese. Serve with dressing.
