Salty pecans, chewy caramel and chocolate...Mmmmm... :-)
Ingredients
1 pounds Pecan halves
4 tablespoons Butter, (melted)
3 teaspoons Popcorn salt
2 pounds Candy chocolate, (buy at a cake supply store)
1 1/2 pounds Caramel, (buy at a cake supply store)
Instructions:
Preheat oven to 250 degrees F. Spread pecans out onto a baking pan and drizzle with melted butter. Sprinkle pecans with 2 teaspoons of popcorn salt; stir. Put pecans in the oven and set timer for 20 minutes. Stir pecans, put back in oven and set timer for another 20 minutes. Stir pecans and add 1 teaspoon of popcorn salt, bake for another 20 minutes. (Total baking time is 1 hour) Take pecans out of oven and let cool until you can pick them up with your fingers.
While pecans are baking, cut caramel into small quarter size pieces approximately 1/4 inch thick. Place caramel pieces on a plate in a single layer. TIP: spray knife and plate with non-stick cooking spray otherwise caramel will stick together.
TURTLE ASSEMBLY: Spread wax paper out on counter top. Separate pecans into clusters of 3, space clusters approximately 3-4 inches apart. Take a piece of caramel and flatten it with your fingers until it is the size of a 50-cent piece. Place caramel on top of pecan cluster. Melt chocolate over a double boiler. If you don't have one you can use a large pot and a glass bowl (make sure glass does not touch water). Spoon chocolate over clusters, covering caramel and pecans entirely. Let cool. Store finished turtles in the refrigerator or freezer.
