Barbecued Chicken Pizza

  I love pizza and I'm always looking for a way to make them healthier. This pizza piles on the veggies and is light on cheese. Treat yourself and enjoy!

Ingredients

  • 1 Jiffy pizza crust mix
  • 1 cups Smoky barbecue sauce, divided, (Sweet Baby Ray's is great)
  • 1 cups Mozzarella cheese, grated
  • 1 cups Cheddar cheese, grated
  • 4 ounces Fresh mushrooms, sliced
  • 1/4 cups Onion, chopped
  • 1 Green bell pepper, sliced
  • 4 Garlic cloves, minced
  • 3 Chicken breasts, diced
  • 1 tablespoons Butter
  • 2 tablespoons Cornmeal, (oprional)
Instructions:
Preheat oven to 450 degrees F. Make Jiffy pizza dough according to package directions and set aside to rise.

Meanwhile, cook chicken breasts in a skillet with water. Dice cooked chicken, add chicken back to skillet along with 3/4 cup barbecue sauce; cook over medium heat until hot.

Slice mushrooms, chop onion, slice green pepper, mince garlic and shred cheeses. Saute mushrooms, green pepper, onion, and garlic in butter until tender; approx. 5 minutes.

Sprinkle corn meal on pizza pan. Roll pizza dough out to edges of pan. Poke holes randomly across surface of dough. Pre-bake crust for 5 minutes. Remove pizza dough from oven and brush with 1/4 cup barbecue sauce and sprinkle with mozzarella cheese. Spoon veggies and barbecued chicken over pizza. Sprinkle with cheddar cheese. Continue baking pizza until crust is browned and cheese is bubbly, approx. 18 minutes.

Cut pizza into wedges; serve hot.
