Italian Herb and Tomato Pizza

  Make your own gourmet pizza at home. You can either buy a pizza crust or make your own focaccia bread (recipe on this site). This pizza has a homemade pizza sauce you're sure to enjoy.

Ingredients

  • 1 Small head of garlic, (about 15 cloves)
  • 1 tablespoons Olive oil
  • 8 ounces Can tomato sauce
  • 1/2 teaspoons Thyme
  • 1 12-inch prepared pizza crust, (or focaccia)
  • 8 ounces Mozzarella cheese, grated
  • 1 Medium tomato, sliced
  • 4 ounces Goat cheese, (or cream cheese)
  • 1/2 cups Basil leaves, fresh, (or 3/4 tsp dried basil)
  • Salt & pepper, (to taste)
  • 2 Chicken breasts, chopped, (optional)
  • 2 Garlic cloves, minced
  • cups Cornmeal
Instructions:
Preheat oven to 500 degrees F. Make pizza dough according to package directions and set aside. If crust is raw, prebake for 5 minutes.

Cook chicken breasts in a skillet with water. Dice cooked chicken, set aside.

Peel 15 garlic cloves. In a small skillet, cook garlic cloves in olive oil over medium heat until very soft and golden; approx. 10 minutes. Roughly chop garlic and set aside.

Combine tomato sauce, 2 gloves of minced garlic and thyme. Spread mixture over pizza crust. Sprinkle with mozzarella cheese. Arrange tomato slices, dollops of goat cheese, basil and chicken on top of cheese. Season with salt and pepper, if desired. Arrange garlic cloves on pizza, drizzle with oil left in skillet.

Bake at 500 degrees F until crust is browned and cheese is bubbly; approx. 18 minutes.

Cut pizza into wedges, serve hot.
