Chicken Alfredo Light

I love alfredo sauce, but not all the fat. This recipe is just as tasty without the guilt.
Ingredients
- 4 Chicken breasts
- 1 Onion, chopped
- 1 Garlic clove, minced
- 2 teaspoons Olive oil
- 2 cups Skim milk
- 1 cups Chicken broth
- 3 tablespoons Flour
- 1/2 teaspoons Salt
- 1/4 teaspoons Ground black pepper
- 1/2 cups Parmesan cheese, grated
- 16 ounces Fettuccine pasta
- 1 Broccoli head

Instructions:
In a medium saucepan, heat oil over medium heat. Add onion and garlic and saute until golden brown.
In a small saucepan, stir together milk, chicken broth, flour, salt and pepper over low heat until smooth and thick. Stir in onion mixture. Continue to cook over medium low heat stirring frequently until the suace is thick. Stir in Parmesan cheese.
Meanwhild, cook pasta in boiling water. Add broccoli to the pasta for the last several minutes of cooking. Continue cooking until the pasta is al dente.
Drain the pasta and broccoli and transfer to a large bowl. Toss with alfredo sauce. Serve. |
