Chicken Salad Croissants

I love the burst of sweet from the raisins and dried cranberries and the crunch of the celery in this recipe.
Ingredients
- 3 Chicken breasts
- 1/4 cups Celery, chopped
- 1/4 cups Raisins
- 1/4 cups Dried cranberries
- 1/4 cups Sliced almonds
- 3/4 cups Light mayo
- 1 tablespoons Red onion, chopped, (optional)
- 5 Croissants

Instructions:
Over medium heat, steam chicken breasts in a skillet with water. Season with salt and pepper if desired.
Remove chicken from pan and roughly chop. In a large bowl, combine chicken, celery, raisins, cranberries, almonds, mayo, and onion (optional); mix well.
Serve on croissants. |
