Chicken Salad Croissants

  I love the burst of sweet from the raisins and dried cranberries and the crunch of the celery in this recipe.

Ingredients

  • 3 Chicken breasts
  • 1/4 cups Celery, chopped
  • 1/4 cups Raisins
  • 1/4 cups Dried cranberries
  • 1/4 cups Sliced almonds
  • 3/4 cups Light mayo
  • 1 tablespoons Red onion, chopped, (optional)
  • 5 Croissants
Instructions:
Over medium heat, steam chicken breasts in a skillet with water. Season with salt and pepper if desired.

Remove chicken from pan and roughly chop. In a large bowl, combine chicken, celery, raisins, cranberries, almonds, mayo, and onion (optional); mix well.

Serve on croissants.
