Baked Parmesan Zucchini Strips

Look for zucchini with bright colored skin free of bruises or spots. Generally, the smaller the zucchini, the more tender it will be. A smaller zucchini will also have thin edible skin and soft seeds.
Ingredients
- 4 Small zucchini
- 1 Egg
- 1/3 cups Bread crumbs
- 1/4 cups Parmesan cheese, grated

Instructions:
Preheat oven to 450 degrees F.
Quarter zucchini lengthwise. In a bowl, combine the bread crumbs and Parmesan cheese. In a separate flat bottom bowl, beat egg. Dip zucchini in egg, then in crumb mixture. Place on non-stick cookie sheet.
Bake for 20-25 minutes or until golden brown and tender. |
