G's Refried Pinto Beans

My husband made up this recipie one day while we were talking on the phone. This is very easy and tastes great! It can be as a meal or even as a side. ENJOY!
Ingredients
- 4 cups Freshly cooked pinto beans, fresh
- 6 tablespoons Cooking oil, canola
- 1/2 cups Onions, chopped, yellow
- 1 Jal., chopped, SMALL JAL.s
- 6 Strips of bacon, chopped
- dash Salt

Instructions:
have freshly cooked pinto beans warmed and ready to add. chop up bacon and cook in Lrg. skillit on medium/high. Cook 10 mins. or to your liking. add chopped Jal.s and onions cook 10 min. Add oil (ONLY IF NEED EXTRA OTHER THAN BACON GREASE!) Add freshly cooked pinto beans without the juice. let fry a min then start mashing them (like mashed potatoes) after pinto beans r mashed add 2cups of pinto beans juice.(more if needed) stir and let cook on low/medium for 10 to 15 mins. Do not over cook or beans will taste burnt and turn dark brown/black. serve warm |
