This soup is so tasty, you'll love it!
Ingredients
- 2 Celery ribs, sliced
- 1 Onion, chopped, medium size
- 1 Garlic clove, minced
- 2 tablespoons Butter
- 6 cups Water
- 28 ounces Diced tomatoes
- 3/4 cups Lentils, rinsed
- 3/4 cups Barley
- 2 tablespoons Chicken bouillion
- 1/2 teaspoons Dried oregano
- 1/2 teaspoons Rosemary, diced
- 1/4 teaspoons Ground black pepper
- 1 cups Carrots, sliced
Topping:
- 1 cups Swiss cheese, grated.

Instructions:
In a large pot over medium heat, saute celery, onion, and garlic in butter until tender. Add water, tomatoes, carrots, lentils, barley, bouillion, oregano, rosemary and pepper. Bring to a boil. Reduce heat, cover and simmer for 40 minutes or until barley and lentils are tender.
Sprinkle each serving with swiss cheese if desired. |
