The panacea...
Ingredients
- 1 Kosher Chicken
- 1/2 pounds Carrots
- 2 Onions
- Whole Black Pepper
- 1 Bay Leaf
- Water
- 1/2 teaspoons Salt
|
Instructions:
Remove the majority of skin & fat from Chicken.
Place in large pot, and cover with Water.
Add Salt.
Tie10-12 Peppercorns and the Bay Leaf into cheesecloth bundle.
Bring to a boil; let boil 30 min.
Add Sliced Carrots and whole (peeled) Onions; boil 30 min.
Remove Chicken to refrigerator and continue simmering broth/vegetables another 20-30 min.
De-bone and chop/tear up cooled Chicken; add back to the pot.
Simmer another 20 min.
Taste and add additional Salt if needed. |
